Great question. Let’s talk about the blushing stage — a sweet spot in tomato harvesting that offers both protection and flavor.

What Is the Blushing Stage?
Also known as the breaker stage, the blushing stage is when a tomato just starts to change color from green to a slight pink, red, orange, or yellow hue (depending on the variety). It’s a sign that ripening has officially begun and the tomato has received all the nutrients it needs from the vine.
From this stage on, it will continue to ripen naturally — even off the vine!
Why We Harvest at This Stage:
Pest & Weather Protection: Waiting too long can leave tomatoes vulnerable to pests, birds, or unpredictable weather. Once a tomato starts to blush, it’s fair game for nature — and that includes squirrels and bugs with an eye for color.
Healthier Plants: Harvesting at the blushing stage reduces the weight stress on the vine and encourages the plant to send energy to other growing fruit.
Longer Shelf Life: Tomatoes picked at the blushing stage are less likely to bruise or split during transport, especially important when donating produce to our local food pantry.
Same Great Taste: Contrary to popular belief, tomatoes continue developing their flavor and texture after harvest. If picked at the right time, you’ll still get that vine-ripened taste — minus the risk.
How to Ripen Off the Vine
We place our blushing tomatoes indoors on a countertop or in a breathable container (no plastic bags!) with good airflow. A sunny windowsill or room-temperature kitchen counter works well. Some gardeners place them near a banana to speed up ripening, thanks to the natural ethylene gas bananas release.
